Creamy Broccoli Cheese Soup


I want to share a special recipe with you. Cream-based soups are a cornerstone of my comfort-food diet. When I realized that the time had come to get serious about eating healthier and dropping some pounds – for the sake of longevity, if nothing else – I despaired over the loss of three things: cheese, bread, and cream soups.

So imagine my joy in discovering a recipe that could satisfy my unfriendly diet urge. Is the soup 90% heavy cream? No. Does it taste rich, cheesy, creamy, and flavorful? You bet. And stay tuned, because you won’t BELIEVE the calorie-count and portion size on this baby. Don’t believe me?

That pic up there? Why, that’s HALF of a single portion. Yeah, I know. Cry with joy – feel free. Can’t blame you.

Creamy Broccoli Cheese Soup
Serves 2 – 4

4 cups fresh or frozen broccoli – chopped into bite-size pieces
2 cups water
2 cups (or, 1 can) low-sodium, fat-free chicken broth (stock works well, too!)
1 onion – chopped (optional)
2 celery stalks – chopped (optional)
1 can condensed Cream of Chicken (Celery and Mushroom also acceptable)
3 medium carrots – grated
1 1/2 c milk (I used 1%)
2 Tbsp cornstarch
1/4 c cold water
1 Tbsp garlic powder
2 tsp pepper
4 oz. medium cheddar cheese – grated

Let broccoli, water, and broth (celery and onion, as well, if you choose) simmer over medium heat for ten minutes. Add garlic salt, pepper, carrot, milk, and cream of chicken. Stir well. In a small bowl, mix together 1/4 c cold water and cornstarch and add mixture to the soup. Simmer until soup begins to thicken.

Add cheese to the soup, stirring until cheese is melted and well-combined. Note: you can use more or less cheese, depending upon your taste, but I found 4 oz. to be perfectly adequate–taste and calorie-wise.

3/4 cup milk [51 calories]
2 oz. medium cheddar cheese [216 calories]

1/2 onion – [30 calories]
1 celery stalk – chopped [6 calories]
